Mountain House® freeze-dried foods are packed in airtight #10 cans. Each of our cans has a protective enamel coating inside and out (including the lid), for double protection. At least 98% of the residual oxygen has been removed, meeting U.S. Military specifications. As a result, our #10 cans have the longest shelf life available: 25 years! We've been around for 49 years and have actually tested our archived products, so we know first hand that our food will be protected until you are ready to use it. After opening, we recommend using the contents within 1 to 2 weeks for best results and taste, using the convenient re-sealable plastic lid between uses. These clear 21mm casings are used for snack stick products like pepperoni but also work great for breakfast sausage links. Sausage sticks made with these casings are normally cured, cooked and smoked. Specially formulated snack stick spices are available from Hi-Country. Our most popular flavor is Pepperoni for your wild game. Collagen casings are made out of collagen, a protein found in the skin and connective tissues of animals. Typically, collagen casings are made from part of a cow hide. The flesh is removed and the collagen is processed, treated and extruded in a tube shape. Casings are shirred (collapsed) when produced and when stuffed, expand to their original length. In America, collagen casings are currently the most popular type. Collagen type casings are stuffed dry (no soaking). Prepping the casings consists of simply placing the casings in a refrigerator overnight to improve pliability. 21mm x 49 ft. Strands. Use your own favorite recipe or pick one of Hi-Country's pre-blended spice seasoning packages for commercial grade quality and full product flavor. This 8 oz. package of 100% Natural Hog Casings will average 32mm to 35mm in diameter and will make approximately 25-30 lbs. of product depending on meat blends, spice mixes, water contents, etc. Store unused casings in salt brine or add generous amount of salt in original resealable pouch. Hi-Country Wild Game Jerky Seasonings are a unique blend of premium grade spices, salt and sugars and specially formulated for stronger wild game meats. Our jerky formulations emphasize slightly higher levels of sugars, or humectants, to help retain moisture longer; which makes for softer, more pliable chewing jerky. Each 14.23 oz. box contains all the seasoning and cure necessary to season up to 16 lbs. of meat (Teriyaki and Bar-B-Que season up to 12 lbs. of meat), including wild game, pork, beef, poultry, waterfowl and game bird. Our jerky spices are a dry cure. Any added moisture will evaporate and lengthen the drying process. The separate cure packet allows the option to omit the cure without compromising the quality of the finished product. The cure packets contain sodium nitrite and salt. When mixed with meat it prevents most forms of spoilage for a limited amount of time. Sodium Nitrite is a color affixer used to obtain a uniform reddish-pink color in the meat. The cure packet must not be consumed by itself and should be kept out of the reach of children. Dispose of unused cure by rinsing contents down the drain.
